Big flavor, little fuss!

This one-pan chicken & cauliflower rice skillet is loaded with garam masala, ginger, turmeric, garlic, and cumin, finished with fresh lemon and cilantro. Healthy, flavorful, and ready in about 15 minutes! Perfect for an easy weeknight meal.

For the chicken:

1.5 lbs chicken breast, cut into cubes

1 tbsp butter (or coconut oil)

For the seasoning:

1 tsp Himalayan sea salt

1 tsp ginger

1 tsp garlic powder

1 tsp garam masala

1/2 tsp turmeric

1/2 tsp cumin

For the rest:

1 onion, diced

1 poblano pepper, diced (or substitute bell pepper)

1 head cauliflower, riced (about 6 cups)-Riced cauliflower can also be found in the freezer section

1/2 tsp Himalayan sea salt

1/2 tsp pepper

1 tbsp lemon juice (about 1/2 lemon)

1/4 cup chopped cilantro (for serving)

Instructions

1. Make the seasoning by combining all of the seasoning ingredients in a small bowl or jar and mixing well. Cut chicken into cubes and toss with the seasoning to cover the chicken cubes.

2. Rice cauliflower and chop the onion, pepper, and cilantro. Set aside.

3. Heat a large skillet over medium heat and add 1 tbsp butter. Once the skillet is hot, add the chicken pieces, onion, and poblano pepper to cook. Cook, stirring occasionally, until the chicken is fully cooked, about 8-10 minutes.

4. Add the cauliflower rice, lemon juice, salt, and pepper to the pan with the chicken. Mix everything and cook, stirring occasionally, until the cauliflower rice starts to soften, about 3-4 minutes.

5. Remove from heat and serve chicken and cauliflower rice topped with chopped cilantro.
